Last weekend I was craving a good salmon filet. We sometimes buy frozen ones just for convenience’s sake, but I wanted a really good one. We were cooking for four, so we picked up a big fresh Norwegian salmon filet at the Whole Foods fish counter to cook that evening. The plan was originally just to jam it into a fish-grilling basket, but then hubby remembered that somewhere we had long-forgotten wooden grilling planks, so we decided to be adventurous and actually use them for once.
To prep the plank, we had to first soak it in water for about 20-30 minutes, making sure both sides got wet. Then I rubbed the fish on both sides with some olive oil, laid it on the plank, and sprinkled with some salt and grilling seasoning we brought back with us from St. John a while back. That was it.
It went on the charcoal grill, along with some asparagus and zucchini kebabs. We didn’t know what to expect. About 20-25 minutes later, the plank was charred on the bottom and the salmon skin sizzled. The top of the salmon looked done. We decided to go ahead and take it off the grill and let it sit on the hot wooden plank for another few minutes.
Best. Salmon. I. Ever. Had.
I mean, it was a transcendental experience. It was flaky but moist (yes, I know I hate that word too). It came right off the skin in big juicy chunks. Mmmmm. I don’t think we’ll ever cook salmon any other way again. We may also never buy a frozen salmon filet again. Oh, the grilled veggies weren’t bad, either. 😉
