Is it just me or is Fall foliage extra magnificent this year?? The trees around our neighborhood are just on fire (figuratively) with all shades of red, pink, yellow and orange. Sometimes all of the above. It almost worries me a little because I feel like nature is saying – “Look!! Here’s something really pretty to distract you from the impending misery of Winter.”
Anyhoo, I’ve been quite busy at home and at work, but none of it has been a ton of great cooking. However, this just might be the first year ever that we host Thanksgiving at our house!! I’m a little nervous and a lot excited, as I tend to go overboard with a variety of dishes that take me two weeks’ worth of time to get planned and prepared. But it’s all so worth it in the end. I plan to probably roast a turkey for the first time, but in case that doesn’t work out too well, maybe also a Beef Wellington as a back-up? Yes, that sounds divine. Also, it would be a great festive recipe to post for the upcoming holiday season. Last time I made Beef Wellington, it came out so fantastic, that people were practically grabbing pieces right out of the baking pan before I had a chance to slice it all!
In the meantime, I wanted to go back and re-post some of the season-appropriate soups and stews I’ve posted in the past, to help your creative juices flowing to get in the kitchen and whip up something yummy and hot for the cold evenings!! Unless, of course, you live in Florida or Hawaii, in which case – I resent you for that. Check out some of my ideas below and let me know what your favorite thing is to cook/eat in the cold months!
