Breakfast Nachos

Looking for a way to put a new twist on breakfast or brunch foods? Look no further! Breakfast nachos are easy and fun. Okay, I confess, I actually made these for dinner on a lazy night (who doesn’t like breakfast for dinner?!). In addition to the usual breakfast foods – bacon and scrambled eggs with cheese, there were other colorful and healthy ingredients, such as kidney beans, tomatoes, and fresh cilantro for a garnish. Colorful and yummy – even the most picky eaters should love breakfast nachos!

For two people, I used:

4 eggs, scrambled and separated into smaller pieces.

6 strips of bacon cooked and crumbled (you can also use sausage.)

2 cups of shredded cheese

1 chopped tomato

some cilantro for garnish

1 cup cooked kidney or black beans (canned work fine)

Half a package of corn tortilla chips.

To assemble the nachos, just lay out some tortilla chips on an oven-proof plate and spread a little bit of shredded cheese. Next come the scrambled eggs, bacon, beans and tomatoes, and finally – more cheese!

Into the oven they go at 350 for about 5 minutes, or until the cheese is melty and gooey. Garnish your plate with some fresh cilantro. Serve with a bit of salsa or guacamole on the side for a Mexican flair, and dig in!
