The other night I had my aunt, grandmother and 8-year-old cousin Alex over for dinner. I roasted an organic chicken, plus made some turmeric basmati rice (it’s my cheaper, healthier version of saffron rice), and beet salad. Upon sampling his slice of roasted chicken breast, Alex declared it to be “amazing.” Coming from a picky little eater, that was quite a compliment. Hence, I have dubbed this recipe “Amazing” roasted chicken. You have to excuse the less-than-amazing photograph, as once everyone saw and smelled the chicken, I only had a split second to take a shot of it with the iPhone, before it got whisked away to the table!. Alex also gave my beet salad “five stars” 🙂

AMAZING Roasted Chicken:

You will need:

1 whole chicken (preferably organic)

A handful of baby onions (however many you can fit inside the chicken cavity)

Half a lemon

1 tablespoon olive oil (or any kind of cooking oil that you prefer)

1 tablespoon garlic salt

1 tablespoon crushed pepper (I used a 5-pepper blend)

Preheat the oven to 500F. Dry the chicken, rub all over with the olive oil, then with the salt and pepper (inside and out). Stuff the inside with the baby onions (or roughly chopped yellow or white onion, if that’s what you have), and the lemon, cut into quarters. Place the chicken in a glass baking dish sprayed with some cooking oil. Roast for 30 minutes at 500, then turn the heat down to 350 and roast for another hour. To ensure doneness, poke with a knife in a couple of spots and if the juice runs clear – the chicken is done. After pulling it out of the oven, let it rest in the dish for a few minutes before carving – that is, if you can wait that long before digging in!!!!.

The fun part is, once the chicken is done, the baking dish should have a delicious garlicky/lemony juice/sauce at the bottom of it. You can use that juice to make gravy, or just squeeze the cooked lemon pieces into it, then spoon the juice over the sliced chicken. It’s that easy, it looks and tasted delicious, and even the pickiest dinner guests will be impressed!!

    I made this chicken the other night for no reason at all. I wasn’t entertaining anyone but myself but felt like making something new. While I’ve roasted chickens before and am always basically satisfied with them, this simple recipe completely blew the others away. It roasted beautifully and tasted delicious. I’ll definitely be re-using the recipe when I have someone else to impress. Thanks Yuliya!
